SMOKED TOFU SUMMER ROLLS

Ingredients for 2

6 rice paper rolls / 1/4 red cabbage (cut into thin long pieces) / 1 avocado (cut into thin long pieces) / 80 gr smoked tofu (cut into long pieces) / Fresh mint / Fresh asian basil / Sesame seeds (to sprinkle) / Soy sauce (for dipping)

Instructions

Fill a wide, shallow bowl with warm water. Working with one spring-roll wrapper at a time, soak until pliable, 20 seconds or so. Transfer to a flat surface and smooth.

Place a layer of fillings on the bottom third of the wrapper.

Roll over once, tuck in sides, and finish rolling. Repeat to make 6 summer rolls. Serve immediately with soy sauces, or refrigerate up to 1 day.
