VEGAN GOULASH

Ingredients for 2

1 big onion / 1 clove garlic / 3 potatoes, chopped in cubes / 10 green beans, chopped in 3 / 1 package of vegan speck / 2 red bell peppers, chopped in cubes / 300 ml tomatoes sauce (passata) / Smoked paprika / Black pepper / ½ glass red wine

Instructions

Have all of your vegetables chopped and ready to go before beginning, as the cooking process is fairly quick.

Fry the onion, bell peppers, garlic, and vegan speck to a large pot over medium heat with a bit of oil. 

Add potatoes, green beans, hot water (or veggies broth) to cover and cook for about 15 minutes until the veggies are tender and all the water is gone. 

Add the wine and let it evaporate. 

Add the tomato sauce, 1 glass of water, paprika, pepper, salt (if needed) and cook about 5 minutes to obtain a creamy consistency. 

Serve immediately either as is or over rice.

RICE NOODLE WITH BOK CHOY

Ingredients for 2

180 gr rice noodle / 1 bok choy / 1 clove garlic / soy sprouts / chilly / fresh corainder

Instructions

In a large pot, fry garlic and the bok choy at medium heat. Add pepper and how water and cook for about 10 minutes, keeping a couple of spoon of the cooking water.

In the meantime, in a large pot boil the noodle for few minutes.

Serve the noodle with the bok choy and its broth. Add soy sprouts, fresh coriander and chilly.
